Preparation
Preheat the oven to 220 °C.
Rinse the halibut.
Scrub the skin well and make incisions in the skin as shown on the recipe picture.
Brush the halibut with lemon juice and a lot olive oil.
Sprinkle with salt and pepper mix.
Place the fish on a baking pan with baking paper and bake in the oven for approx. 20-40 minutes, depending on the size of the fish.
Parsley butter
Whisk room temperatured butter fluffy.
Mix parsley and garlic to a purée in a blender, and add sunflower oil while the blender is running.
Add grated parmesan.
Add the parsley purée into the butter and taste with salt and pepper.
Roll the butter to a sausage in a piece of baking paper and set to cool before serving.
Serve the halibut with parsley butter, potatoes and the gravy from the pan.
